Whole Wheat Banana Blueberry Protein Muffins

These delicious vegan muffins have 4 grams of soy protein per serving.  They are a great way to start your day or a perfect snack to keep you going.

I'm the type of person who likes to eat 3 small meals, snacking my way between them.  I try to have healthy, tasty fulfilling foods around so I can keep my energy up and avoid eating empty calories.  These muffins have become a favorite in our home and I hope you enjoy them!



Preheat the oven to 375 degrees 
Makes 12 muffins

Ingredients

1 cup whole wheat flour
1/4 teaspoon salt
3/4 teaspoon baking soda
1/4 teaspoon baking powder
2 scoops protein powder
2 ripe bananas
1/2 cup maple syrup
1/4 cup oil
1/4 cup apple sauce
1 splash of orange juice
1/2 teaspoon vanilla
1/2 cup blueberries (fresh or frozen)
1/2 cup walnuts

Instructions

Combine all the dry ingredients (flour, salt, baking soda, baking powder, protein powder) into a large bowl.   Mix well.  Grab a second bowl, where we will mix the wet ingredients, but first we need to mash our bananas.  I typically use a wooden spoon to do this, but if your banana isn't quite ripe enough you can use a potato masher.  I mash the banana right into the bowl.  You can mash them to your desired consistency.  I like mine to be nice a smooth, but if you prefer to have banana chunks in your muffins, that works too!  When you get your bananas to a good consistency you can add the rest of the wet ingredients (maple syrup, oil, apple sauce, orange juice and vanilla).  For the orange juice, I say 1 splash because you are just adding the OJ to be a wet counterpoint to the protein powder.  It would probably be about 1/8 a cup of OJ.  Now that you've mixed all of your wet ingredients, we can add the dry ingredients into the wet.  Pour half of the dry ingredients into the wets and mix well.  When they are fully incorporated add the rest of the dries and mix well.  Now, we can add the blueberries and walnuts.  Mix gently, as to not breakup the berries.  Pour the batter into your muffin tray and place in the oven for 20 minutes.
